Lemon & basil sorbet

1. Bring the water to the boil, add the sugar, and simmer for about 2 minutes. Leave the mixture to cool down.
2. Add the SICILIA lemon juice and the chopped basil leaves (save some for decoration purposes).
3. Put the liquid in the freezer to cool for approx. 1-2 hours (until almost frozen).
4. Beat the egg whites until stiff, and carefully fold in.
5. Then pour the mixture into an ice cream machine for approx. 20 minutes. Garnish with basil leaves before serving.

130 g sugar
200 ml water
1 bunch basil
1 egg white
