Lemon & basil sorbet

1. | Bring the water to the boil, add the sugar, and simmer for about 2 minutes. Leave the mixture to cool down. |
2. | Add the SICILIA lemon juice and the chopped basil leaves (save some for decoration purposes). |
3. | Put the liquid in the freezer to cool for approx. 1-2 hours (until almost frozen). |
4. | Beat the egg whites until stiff, and carefully fold in. |
5. | Then pour the mixture into an ice cream machine for approx. 20 minutes. Garnish with basil leaves before serving. |
